Participants may enrol for one day only or enjoy the full two-day journey, each day showcasing a different paella tradition.
Saturday - Paella Valenciana (The Authentic Experience) - $125 per day
- Introduction & History: Discover why Paella Valenciana is the only paella recognised as authentic in Spain.
- Hands-On Cooking: Prepare the traditional recipe with chicken, rabbit (or free-range chicken), beans, saffron, and rice, exactly as it is judged in international competition.
- Techniques Learned: Master sofrito timing, stock management, flame control, and the perfect socarrat.
- Shared Table: Sit down together to enjoy your creation in the spirit of Valencian tradition.
Sunday - Arroz con Salmón estilo de Tasmania (Seafood Paella Experience) - $125 per day
- Cultural Background: This paella was born from blending Spanish tradition with New Zealand’s finest local produce.
- Hands-On Cooking: Cook Edrick’s award-winning Tasmanian-style seafood paella, featuring Akaroa salmon, squid, capsicum, and seasonal seafood.
- Techniques Learned: Seafood stock preparation, timing delicate ingredients, and balancing flavours with saffron and sea salt.
- Shared Table: Gather to taste the dish that won international praise, sharing a celebratory Mediterranean meal.
